Title:Process of making mezcal
0185-Process of making mezcal
Documentation of Zenzontepec Chatino language and culture
Contributor:TCR
Coverage:Mexico
Date:2008-07-30
Description:TCR explains to FCO and EC how to make mezcal. The maguey is harvested. An oven is made. The maguey is put in a pot and covered with red hot rocks and buried in dirt for three or four days. Then the maguey is crushed in a mill and put in a large pot to ferment for three or four more days. From there it is distilled into a large pan where it is kept cool. It is distilled again. The first bit to come out is earthy and not drunk. It is poisonous and can cause blindness. When the good stuff comes out it should be bubbly. At 1:08 TCR unwittingly switches to Spanish. FCO alerts him, and he switches back to Chatino at 1:28. A Spanish retelling begins at 7:55. Audio duration [00:14:27]
