Description:When one is harvesting in Yoloxóchitl the practice is to double the stalk towards the ground so that the ear of corn, now starting to dry, is pointing down. This prevents any rain water from getting into the ear of corn, still covered in its husk. But sometimes a stalk might be left by accident undoubled, or water might get in between the husk and the ear of corn. The kernels then, in stead of drying rot and turn yellow. They cannot be eaten not even to feed animals. A few people might take this maiz, however, and boil it with beans to eat it that way. It is not good for making nixtamal and tortillas.
